Once harvested, this astonishingly good carnaroli rice is aged in its hulls for 12 months to allow it to absorb the most precious nutritional elements. This also ensures perfect rice once cooked, helping it to maintain its integral shape. It is then semi-milled, removing the husk, part of the germ and the outer, but not inner, layers of the pericarp. Through careful drying at low temperatures, the rice grain remains whole, so that no broken grains enter the final product.
