The Ravida estate make this wonderful lemon oil by pressing ripe lemons with the olives at harvest. It is zesty and fresh, with an uplifting aroma that will transport you straight to the lemon groves of Sicily. The oil works very well over rich shellfish such as crab, or as an addition to a fresh mayonnaise, and makes an excellent salad dressing when mixed simply with a grating of fresh lemon zest and some toasted pine nuts.
